How to Prepare Black Bean Salad

BLACK BEAN SALAD

4 cans (15 oz.) black beans, rinsed

1,5 cups chopped tomato

1/2 cup chopped red onion

3/4 cup chopped green bell pepper

2 tablespoons chopped scallion

1/3 cup red wine vinegar

2/3 cup olive oil

2 teaspoons ground cumin

1 teaspoon black pepper

1 teaspoon salt

In a large bowl, combine all ingredients. Refrigerate before serving. Makes about 8 cups.
